Momofuku Ssam

Split with Ben:

Long Island fluke with tiger's milk, fennel and nori.

Honeycrisp apple kimchi with jowl bacon and arugula served with maple cream sauce.

Steamed pork belly buns with cucumber and scallion and smeared with hoisin.

Roasted diver scallops with bok choy and black garlic.

Fried Brussels sprouts with mint and fried rice in a fish sauce vinaigrette.

Cocktail: Penicillin - scotch with lemon, ginger and honey.
