Dessert: transparent rum canneloni with vanilla cream and raspberry.

Cocktail: The Beet Goes On - Plymouth gin with ginger liqueur, beets and lime topped with celery foam.

Honeycrisp apple kimchi with jowl bacon and arugula served with maple cream sauce.

Steamed pork belly buns with cucumber and scallion and smeared with hoisin.

Roasted diver scallops with bok choy and black garlic.

Fried Brussels sprouts with mint and fried rice in a fish sauce vinaigrette.

Cocktail: Penicillin - scotch with lemon, ginger and honey.
